Ingredients (serves 6):

  • 200g pasta
  • 100g cherry tomatoes
  • 100g sweet pepper
  • 100g cucumbers
  • 60g olives
  • 50g herbs
  • pepper, garlic (optional)
  • Happy Kitchen TM pumpkin seeds, pumpkin seed oil (optional)
Boil durum wheat pasta and rinse it in cold water. Wash and coarsely chop the vegetables. Mix together all the ingredients in a large bowl (except for pasta). Add salt, pepper, finely chopped garlic, olives. Mix the vegetable extravaganza with the cooled down pasta, and finely chopped herbs. Sprinkle with pumpkin seeds and season with pumpkin seed oil.
