Ingredients (serves 4):
  • 350g prawns
  • 100g sweet pepper
  • 2 courgettes
  • 200g rocket, frisee and radicchio mix
  • 100g cherry tomatoes
  • 150g Happy Kitchen TM avocado oil
  • 1 clove of garlic
  • 20g red onion
  • 1 lemon
  • salt, black ground pepper (optional)
Peel the prawns and slice the courgettes. Grill the prawns and courgettes until ready and cool
down. Mix together the courgettes, torn green lettuce, halved cherry tomatoes and red onion
rings, add a clove of garlic to your liking. Season with avocado oil. Serve the vegetable mix
on plates with the grilled prawns on top.
